Lychee martinis

Mix vodka with lychee juice, add some lime and tinned or fresh lychees! Simple and freshly sweet!




Bumper mojitos




During my trip to Malta I was intent on putting basil in our mojitos. Finally it paid off, after we improvised our own version of mojitos topped with frozen strawberries we tried in a bar.
Crush basil with sugar, fresh pomegranate and plenty of lime juice, using a pestle and mortar. Pour over ice and add dark rum. Add some lemonade and top it all off with thin slices of cucumber and some basil leaves to serve. Refreshing and delicious!


Baileys hot chocolate
This warms you on a snowy evening. Make a paste with cocoa and sugar and 2 teaspoons of milk. Heat a cup of milk in the microwave or the hob. Stir well so to make the milk a bit frothy and add to the paste, whilst continuing to stir. Then add a serving of baileys to the hot chocolate. Can be served with whipped cream and marshmallows to top it off!


Mulled wine

1 bottle cheap red wine
1 large juicing orange
1 stick cinammon
Handful of cloves
2 cardommon pods
2-3 tablespoons sugar (any is fine)

1. Heat all the ingredients together until lightly simmering. Leave on low heat for 5 minutes.
2. Drain through a tea strainer or fine mesh colander and serve hot!

Bloody Marys

I love these as a treat when i get home. It's like having a meal and a drink in one! (serves 4)

500ml tomato juice
100ml vodka
5-10 drops tobasco sauce
10 drops woucester sauce
Salt and freshly ground pepper
2 celery sticks

Mix the ingredients and serve in a chilled glass with half a celery stick per person.



Winter warmer

We made this cheap and potent cocktail before a night out, served with roast chesnuts for the cold. YUM.

500 ml vodka
500 ml ginger wine
500 ml cranberry juice
Handful mint
Juice of 1-2 limes
Frozen berries (optional)

Mix together in a large jug, or any other vesicle you can find,  and that's it! So simple and delicious.
